Crispy Chicken wraps with chilli relish

Crispy Chicken Wraps with Chilli Relish




Serves 4
Preparation time 10 minutes
Cooking time 20 minutes

2 Chicken Fillets skinless
1 cup of Krummies
Shake of salt and pepper
Mission Mini Wraps ( i only used 4 wraps but packs are for 8)
Spring onions 3 cut angled in pieces but not the dark green parts
Roasted capsicum and chilli relish

Egg mayo ( Birch & Waite whole egg mayonnaise is wonderful!!)

Cos lettuce chopped small
Avocado (optional)





Cut up your chicken into long bite size pieces and roll them in a flat plate or a large flat bowl with krummies and salt & pepper.
Place a frypan with a little olive oil to cover the base on the low heat of your stovetop.  Place the pieces of chicken in and keep on low heat while preparing the following. Turn when nicely cooked You may need to do two lots of frying depends on your fry pan size. When cooked transfer these to the oven and keep warm with the wraps (wraps on 180 for approx 10 minutes)

When all chicken done and the wraps heated up add some chicken to each wrap and add what you like as filling.  These have a little relish, mayo, avocado, lettuce and spring onion.

This is an ideal lunchtime leftover as you can always glad wrap and refrigerate the ingredients and place some baking paper over a spare wrap rolled up in your lunchbox for reheating in microwave the next day.  Make sure to only re heat chicken that has been purchased fresh and not frozen re heated twice.
